Résumé

Management of the safety of food in international trade involves international organisations, governments, commercial interests and consumer advocates in a matrix that is now strongly influenced by the provisions of the World Trade Organization Sanitary and Phytosanitary Agreement (WTO SPS Agreement). All stakeholders in food safety are increasingly focusing on integrated strategies that apply risk-based and cost-effective sanitary measures from farm-to-plate, and the discipline of risk analysis provides a useful framework within which to discuss contemporary issues.
