Résumé

Aeromonas hydrophila is ubiquitous in water, water habitats and foods, and is increasingly resistant to many animicrobials, which is a cause for concern. A. hydrophila is able to grow at refrigeration temperatures but is sensitive to heating, pH, NaCl, oxygen and phosphates and most hurdle technology suitably controls levels of contamination.
