This book is a coordination of RTD policies and is the report of the FAIR ad hoc Advisory Committee. Each contribution begins with an overview and outline of the national strategy before going on to give a summary of the national research programmes. This has been divided into various sections covering food safety (microbiological safety, toxicological and chemical safety) and nutrition (diet and consumption including consumer choice) and functionality (food designed for health).
