LES BLOCS CONSIDERES SONT DE 2,5 KG ET EMBALLES. LA CONSERVATION DURE 16 MOIS A UNE TEMPERATURE DE 255 K (-18 DEG C), PLUS OU MOINS 5 K. TOUS LES 4 MOIS, ON APPRECIE LA TENEUR EN EAU, LE PH, LA COULEUR, LA RESISTANCE AU CISAILLEMENT, L'ACIDE THIOBARBITURIQUE, L'AZOTE TOTAL ET LA SAVEUR. LES RESULTATS SONT ANALYSES. LE TEMPS A UNE INFLUENCE NETTE SUR LA QUALITE. SEULES LES MESURES DE RANCISSEMENT SONT AFFECTEES PAR LE TYPE D'EMBALLAGE.
