Quality changes of fresh-cut fruits in CA storage.

Résumé

Fresh-cut strawberry, peach, and honeydew were stored in air or CA at 5 °C for 9 days and the respiration rate, quality, and microbial population were monitored. The gas mixture of CA was 1% O2 + 10% CO2 for hulled strawberries, 1% O2 + 5% CO2 for peach slices, and 2% O2 + 10% CO2 for honeydew cubes. Ethylene, CO2 production and O2 consumption of fresh-cut fruits were lower when held in CA than in air. Quality of fresh-cut fruits held in CA was slightly better than those held in air. Microbial growth was less on samples held in CA. Thus, CA was beneficial in maintaining quality of fresh-cut fruits.
