Summary

Maintenance of the following plant is indispensable: cleaning and washing of refrigerating plant premises; testing of tightness in cold rooms; maintenance of refrigerating plant; calibration of temperature and relative-humidity probes and carbon dioxide and oxygen analyzers; revision of equipment used to achieve controlled atmospheres; control of humidification systems; adapting of the computer system and process controllers. Lastly, the author provides advice on plant commissioning and monitoring during storage and recommendations for certain fruits and vegetables.
