Summary

THE AUTHORS PROPOSED A GRAPHICAL ANALYTIC METHOD FOR CALCULATING FREEZE-DRYING OF COTTAGE CHEESE, USING THE W-I DIAGRAM (PROPORTION OF WATER IN CHEESE-ENTHALPY). AN EXAMPLE OF CALCULATING FREEZE-DRYING USING THE DIAGRAM IS GIVEN. THE METHOD ENABLES THE PROCESS OF FREEZE-DRYING TO BE ANALYSED AND A WIDE RANGE OF ENGINEERING PROBLEMS TO BE SOLVED, PARTICULARLY IN THE FIELD OF EQUIPMENT SELECTION AND CONTROL OF THE TECHNOLOGICAL PROCESS. THE METHOD HAS ALREADY BEEN USED SUCCESS-FULLY IN THE APPLICATION OF FREEZE-DRYING TO MILK PRODUCTS AT THE SLUTSKII DAIRY FACTORY.
