Summary

A REVIEW IS PRESENTED ON FREEZE-DRYING OF FOODSTUFFS, CONSIDERING TECHNOLOGY AS WELL AS EQUIPMENT. IT IS CONCLUDED THAT THE MOST SUITABLE FOOD PRODUCTS FOR FREEZE-DRYING ARE FERMENTED MILK PRODUCTS, PARTICULARLY KEFIR. TECHNOLOGY FOR DRYING OF CHEESE AND OTHER DAIRY PRODUCTS IS ELABORATED. TRENDS FOR INCREASING SPECIFIC PRODUCTIVITY OF FREEZE-DRYING EQUIPMENT ARE DISCUSSED.
