Summary
Storage of food below 5 deg C may locally cause a temperature below -1 deg C. The "Karlsruhe test substance" freezes at this temperature. A modified test substance with a lower freezing point due to an increased salt content is proposed. Differences from the "classical" substance are analyzed.
