Summary

Design of a management strategy to assure food safety in the chilled poultry supply chain using the hazard analysis critical control point (HACCP) with quantitative microbial risk assessment (QMRA) is one objective of the integrated project CHILL-ON. The project aims, amongst other goals to develop a QMRA model that will produce and estimate the probability of adverse health effects due to microbial contamination in the supply chain taking into consideration environmental effects, like e.g. temperature. The uniqueness and novelty of the CHILL-ON model approach is an integration of the QMRA and the HACCP. Both will be operating in parallel and be implemented into a decision support system to achieve real time inputs for the risk assessment.
