Chilled transport and storage of fish: application of predictive microbiology.

Summary

Predictive microbiology is being used in the meat industry by application of time temperature function integration, to address both safety and quality issues. Predictive microbiology has utility also in the development of science-based HACCP plans, and in the emerging field of quantitative microbiological risk assessment. It is concluded that future developments in predictive microbiology will involve more detailed understanding of physiological lag phases and their induction, improved applications technology, measurement of variability in responses to aid in health-outcome based process assessment.
