A rapid method to determine the sorption isotherms of peanuts.
Author(s) : CHEN C. C.
Type of article: Article
Summary
The equilibrium relative humidities, ranging from 10 to 95%, were measured at temperatures ranging from 5 to 45 °C. No significant differences were found between the experimental results of the equilibrium moisture content and equilibrium relative-humidity methods. The curve-fitting agreement of the adsorption and desorption data for 4 equilibrium relative-humidity models was evaluated.
