Summary
The authors developed a new procedure for estimating freezing time, a procedure for which thermal data on the food being frozen are not needed. A simplified approximate equation which has an analytical solution was derived to describe the time/temperature profile with an acceptable accuracy during freezing aqueous solution of sodium chloride.
