Summary

FREEZING AND THAWING MUSCLE TISSUE DAMAGES THE MUSCLE MITOCHONDRIA AND THIS IS EXPRESSED IN A PARTIAL RELEASE OF MEMBRANE-BOUND MITOCHONDRIAL ENZYMES INTO THE SARCOPLASM. THE AUTHORS STUDIED THE INFLUENCE OF THREE MONTHS' STORAGE OF BOVINE MUSCLE AT 253 K (-20 DEG C) ON THE ACTIVITY AND SUB-CELLULAR DISTRIBUTION OF THE MITOCHONDRIAL ENZYMES ACONITASE (AC), FUMARASE (FU), GLUTAMATE DEHYDROGENASE (GLDH), MALATE DEHYDROGENASE (MDH) AND SUCCINODEHYDROGENASE (SDH). THE DEPENDENCY OF ACTIVITY ON STORAGE TIME WAS VERY COMPLICATED IN THE CASE OF MDH, BUT WAS REPRODUCIBLE, WHILST THE TOTAL ACTIVITY OF SDH DID NOT ALTER MUCH. FROZEN STORAGE CAUSED NO SIGNIFICANT INCREASE IN THE ACTIVITY OF AC, FU, GLDH AND SDH IN THE MUSCLE PRESS JUICE. STORING BOVINE MUSCLE FOR THREE MONTHS DOES NOT CAUSE ANY CLEARLY RECOGNIZABLE ADDITIONAL DAMAGE TO THE MITOCHONDRIAL MEMBRANES.
