Adiabatic cooling of unpackaged food.

Adiabatische Kühlung von unverpackten Lebensmitteln.

Author(s) : KURZHALS H. A.

Summary

Adiabatic cooling makes it possible to cool food arriving at higher temperatures, with moist air the whole year round, with no need for an extra refrigerating machine. For the cooling of sliced bread this technology means that cool air in an absolute humidity range is always available, with extended shelf life of bread and less weight loss from drying out. The installation uses less energy than other refrigerating machines if the recirculated air is humidified before each cooling stage. Mixing in of outside air and the removal of corresponding quantities of exit air provides a constant specific initial enthalpy of 63 kilojoules/kg in Northern Europe (Central Europe: 69 kilojoules/kg).
