Summary

The authors suggest a method to value the microbiological quality of fresh vegetables to be consumed raw; using as critical control point the microbiological analysis of the water used to wash them. The survey was carried out examining 35 water samples collected from the washing tanks of a factory where various vegetable products are processed and packaged. Faecal coliforms were present in 42.9% of the washing water samples, E. coli in 40.0%, enterococci in 77.1% and anti-E. coli phages in 11.4%. The microbiological monitoring of the washing water seems to be a useful method not only to control the safety of the fresh vegetables, but also to verify if good agricultural practices are complied with.
