Summary
Having reviewed the geography of apple tree cultivation in Northern Italy, the authors analyze the main trends in the field of long term cold storage, inparticular: equipment in fruit packing stations (centralized refrigeration machinery with water glycol as a secondary refrigerant, sandwich panel insulation, two speed fans, rapid cooling systems), and for modified atmosphere systems (ULO, electronic control) and more generally, the development of a global quality policy (quality control, "integrated action", etc).
