Application of ice slurry technology in fishery.

Summary

This paper deals with an application of ice slurry technology in a fish cannery, where the slurry is used for the canned sardine operation. The first part of the paper presents the background of the application. Experimental and theoretical results on fish cooling with different types of ice are presented and discussed. The second part of the paper concentrates on the installation of two automated systems, one with a 16-ton ice generating unit and two central mix tanks, another with a 32-ton ice generating unit, an ice storage tank/harvester and a remix tank. With ice slurry, the quality of fish is significantly improved. In addition, fully automated slurry operation enhances the productivity of the plant.
