Summary
Microbial colonization of stainless-steel food processing equipment, or leaf surfaces (of vegetables in particular) was investigated. Non-invasive methods were used. By gaining an insight into these phenomena, it is possible to achieve improved minimal processing of certain fresh vegetables.
