Summary
The most important features of the banana ripening process are described in this paper. Close attention is paid to the effects of temperature and humidity. The effects of ethylene produced during the transpiration process is discussed. The possibilities of controlling the ripening process by means of maintaining appropriate temperature and atmosphere composition in the ripening rooms are discussed.
