Summary
A study was carried out in Germany to compare the incidence of black spot at harvest time and after storage (for 6 months at 4 °C) in 21 potato cultivars. Data are presented on dry matter weight, polyphenol oxidase (catechol oxidase) activity and discoloration of potato skin and potato fluid. A clear correlation was found between black spot and dry matter weight.
