THE OCCURRENCE OF BLACK SPOTS ON SPINY LOBSTER AND SHRIMP DURING CHILLING AND COLD STORAGE RAISES SERIOUS PROBLEMS FOR PRODUCERS IN DEVELOPING COUNTRIES AS IT RESULTS IN HIGH MARKET LOSSES. BLACKSPOT CAN BE EXPLAINED BY THE FORMATION OF MELANOSIS WHICH, IN TURN, IS CAUSED BY FACTORS SUCH AS TRAUMA, STRESS AND A DECREASE IN THE OXYGEN SUPPLY. THE SEX OF THE ANIMAL AND ITS MOULTING STAGE ALSO PLAY A ROLE IN THE FORMATION OF MELANOSIS. A SOLUTION PREVENTING THE FORMATION OF MELANOSIS IS GOOD HANDLING PRACTICE.
