Summary

STARVING AFFECTED THE GENERAL QUALITY OF ROCK LOBSTERS ; NOT ONLY DID IT IMPROVE THE TASTE AND PARTICULARLY THE TEXTURE OF THE TAIL FLESH, TO A SMALL EXTENT IT ALSO STABILISED THE CARAPACE CONTENT. BY CLEANING THE CROP AND GUT IT EVIDENTLY RESULTED IN A DECREASE IN THE HEPATOPANCREAS PROPORTIONS AND ENZYME ACTIVITY. THE IMPROVEMENT IN THE TASTE OF THE ROCK LOBSTERS WAS CONFIRMED BY THE PRESENCE OF INOSINE MONOPHOSPHATE IN GREATER NUMBERS OF THE STARVED ROCK LOBSTERS. IT WAS ALSO EVIDENT THAT THE STARVED ROCK LOBSTER HAD AN IMPROVED SHELF-LIFE UP TO SIX MONTHS.
