Summary

A PHYSICAL MODEL IS PRESENTED AND A MATHEMATICAL DESCRIPTION IS GIVEN FOR HEAT AND WATER TRANSFER IN A VENTILATED LAYER OF FRUIT AND VEGETABLES, ALLOWING FOR THE AIR CROSSFLOW OF HEAT ANDMASS TRANSFER. A DIGITAL CALCULATION METHOD USING A SYSTEM OF DIFFERENTIAL EQUATIONS FOR HEAT EXCHANGE IS DESCRIBED AND AN EXAMPLE OF USE FOR THE CALCULATION OF LOCAL AND INTEGRAL LOSSES OF THE LOT IS GIVEN. THE EFFECT OF VENTILATION RATE AND OF THE GEOMETRICAL CHARACTERISTICS OF THE LOT ON DRYING WA VLE THE RESULTS CAN BE USED BY PROJECTS FOR THE ELABORATION OF COOLING SYSTEMS FOR FRUIT AND VEGETABLES STORES.
