THE AUTHOR DESCRIBES THE BUILDING OF COLD STORES WITH HIGH CONSTRUCTIONAL AND HYGIENIC STANDARDS AND WITH A CONTROLLED CLIMATE USING CONCRETE-SANDWICH ELEMENTS. THE SYSTEM ENSURES A QUICK DROP IN THE SURFACE TEMPERATURE OF THE MEAT AND THUS PERMITS A HIGHER RELATIVE HUMIDITY IN THE STORE WITHOUT THE RISK OF THERE BEING CONSIDERABLE GROWTH OF BACTERIA. WEIGHT LOSSES FROM THE MEAT ARE KEPT WITHIN LIMITS.
