AS THE CHARACTERISTICS DIFFERENTIATING FROZEN AND FRESH FISH ARE CLEARLY STATED IN INTERNATIONAL RECOMMENDED CODES OF PRACTICE OF THE FAO, THAWED-FROZEN FISH CANNOT BE SOLD AS FRESH. HOWEVER, THE AUTHOR EXPLAINS THAT, UPON HIS OPINION, THAWED FISH CAN BE SOLD AS FRESH, AS FAR AS SUITABLE FREEZING TECHNIQUES WERE USED, IN ORDER TO MINIMISE FLAVOUR AND TEXTURE DETERIORATIONS.
