Summary

Polyphenoloxidase (PPO) activity decreases in 4,000 and 100,000 xg fractions and increases in soluble and 200 xg fraction during storage for 28 weeks under controlled atmosphere. Electrophoresis is carried out for the 4,000 xg fraction isolated from the apple after harvest and after storage.
