THE AUTHORS PRESENT THE RESULTS OF INVESTIGATIONS INTO THE EFFECT OF PACKAGING ON QUALITY CHANGES IN FROZEN STRAWBERRIES. STUDIES WERE MADE AT LABORATORY AND INDUSTRIAL SCALES. IT WAS OBSERVED THAT A PACKAGING LIMITING WATER EVAPORATION AND OXIDATIONPROCESSES IS ADVANTAGEOUS FOR THE PRESERVATION OF FRUIT ANTHOCYANINES, VITAMIN C, WEIGHT AND COLOUR.
