Summary
Phenotypical identification of 61 lactic bacteria isolates in several foods stored at 2-10 deg C. Identification is carried out by measuring gas, hydrogen peroxide production, off-flavours, flaws in glucide fermentation and antagonistic activity. Several of these strains are retained for their capacity of inhibiting other bacteria which are pathogenic or which contaminate foods.
