Summary

WEAKFISH, CYNOSCION REGALIS, WERE HARVESTED SEASONALLY FOR A 12 MONTH PERIOD TO DETERMINE THE CHEMICAL COMPOSITION AND FROZEN STORAGE AT 255 K (-18 DEG C) STABILITY OF FILLETS, MINCED FLESH, AND WASHED MINCED FLESH. ONE-POUND BLOCKS WERE PREPARED, FROZEN, AND EVALUATED AFTER 0, 3, 6, AND 12 MONTHS OF STORAGE. THE RESULTS SHOWED THAT HARVESTING SEASON AND FROZEN STORAGE HAD LITTLE EFFECT ON THE CHEMICAL PROPERTIES OF THE FLESH.
