Summary

THE FILLETING YIELDS OF THAWED UNGUTTED FISH WERE DETERMINED AND THE CHEMICAL COMPOSITION OF FILLETS WITH AND WITHOUT SKIN WAS ANALYZED. WITH A FAT CONTENT OF 0.9-1.1% THE ALASKA POLLOCK IS A TYPICAL LEAN FISH. COMPARED WITH FRESH ALASKA POLLOCK THE DMA-N-VALUE OF THAWED MATERIAL WAS SIGNIFICANTLY INCREASED. THE SCORING TEST SHOWED A HIGH QUALITY FOR SKINNED FILLETS WHEN COOKED IN THEIR NATURAL JUICES OR FRIED.
