THE SYSTEMS ANALYZED, ALL OF WHICH WERE PEACH BASED, DIFFERED AS REGARDS WATER ACTIVITY (RANGING FROM 0.85 TO 0.90) AND STORAGE TEMPERATURE RANGING FROM 273 TO 303 K (0 TO 30 DEG C THE 2 TEST MICROORGANISMS (DEBARYOMYCES HANSENII AND ZYGOSACCHAROMYCES BAILLII) WERE CHOSEN ON THE BASIS OF THEIR TENDENCY TO GROW AT LOW PH AND WATER ACTIVITY. SHELF LIFE MAPS WERE PREPARED ON THE BASIS OF GAS CHROMATOGRAPHY DETERMINATIONS OF CO2 DURING STORAGE IN RELATION TO THE WATER ACTIVITY AND TEMPERATURE. THE PROPOSED METHOD IS RAPID (3 MIN PER ANALYSIS), EASILY APPLIED, INEXPENSIVE, ACCURATE AND AVOIDS SAMPLE DESTRUCTION.
