Summary

THE AUTHORS DISCUSS THE METHODS FOR DETERMINING WATER ACTIVITY IN FOODSTUFFS. TO THIS PURPOSE, A MEASURING DEVICE WAS ELABORATED, WITH A SEMI-CONDUCTOR PICK-UP. WITH THIS DEVICE, WATER ACTIVITY WAS MEASURED IN VARIOUS TYPES OF PLANT RAW MATERIALS AND QUICK-FROZEN FRUIT AND VEGETABLE PRODUCTS. THE VARIATION OF WATER ACTIVITY DURING THE COLD STORAGE OF QUICK-FROZEN PLANT PRODUCTS IS CORRELATED WITH BIOCHEMICAL CHARACTERISTICS. THE DATA OBTAINED ALLOW ONE TO INCLUDE WATER ACTIVITY IN THE INDICES FOR THE QUALITATIVE EVALUATION OF PLANT PRODUCTS DURING THEIR STORAGE.
