Summary

STUDY OF THE CHANGES IN THE COMPOSITION (WEIGHT LOSS, GLUCIDES, VITAMINS, PROTEINS, POLYPHENOLS), TEXTURE, COLOUR AND APPEARANCE OF EGGPLANT STORED AT 5, 10 AND 20 DEG C DURING 18 DAYS. THE RESULTS SUGGEST THAT STORAGE AT TEMPERATURES RANGING BETWEEN 5 AND 10 DEG C DURING LESS THAN 18 DAYS GIVES THE BEST KEEPING QUALITY.
