Summary
INVESTIGATIONS WERE CARRIED OUT TO ASSESS THE EFFECTIVENESS OF A MODIFIED ATMOSPHERE VERY HIGH IN CO2, COMBINED WITH A GAS-TIGHT PACKAGE AND TWO LOW-TEMPERATURE STORAGES, 275 AND 253 K (2 AND -20 DEG C), TO CONTROL THE SPOILAGE AND THE OIL OXIDATION OF SARDINES. THE RESULTS ARE DISCUSSED.
