Microbiological stability of modified atmosphere-packaged smoked tilapia stored under refrigeration.

Summary

Smoked tilapia were packaged under the following modified atmospheres: 10CO (100% CO2), 10N (100% N2), 82CN (80% CO2; 20% N2), 532CON (50% CO2; 30% O2; 20% N2) and A (air). The latter served as the control. Initial aerobic counts average was 1.48 log CFU/g on day 0, but these decreased for all treatments except for the 10N packages. Initial anaerobic counts were smaller than 1 log CFU/g on day 0, but by day 28 the anaerobic counts increased for all treatments except for the 82CN packages. Lactobacillus spp counts for 10N and 10CO treatments increased from 1.3 to 2.3 log CFU/g after 28 days, but for the control (air), 82 CN and 532CON treatments the counts were smaller than 1 log CFU/g on day 28. Even though the preliminary studies showed growth of possible Clostridia spp. In the Reinforced Clostridia Medium used for the counts further analyses indicated that the colonies were not any Clostridia spp but were a Streptococcus spp. The Clostridium botulinum counts as well as the Staphylococcus aureus counts were smaller that 1 log CFU/g through out the storage period for all treatments.
