Summary
IN THE LAST TEN YEARS, SIGNIFICANT PROGRESS WAS MADE IN TURKEY IN THE APPLICATION OF REFRIGERATION TO THE FOOD INDUSTRY. THE OVERALL CAPACITY (2,345,000 M3 AT PRESENT) OF THE 1,000 COLD STORES IS INCREASING EVERY YEAR. AMONGST THE AGRICULTURAL PRODUCE TREATED AND STORED UNDER REFRIGERATION, FRUIT, VEGETABLES, DAIRY PRODUCTS AND MEAT ARE AT THE FIRST PLACE. THE AUTHOR DESCRIBES THE GENERAL CHARACTERISTICS OF EXISTING COLD STORES.
