STUDIES ON THE SURVIVABILITY AND THE ACTIVITY OF L. PLANTARUM-L4 CULTURES IMMEDIATELY AFTER FREEZING IN A NITROGEN MEDIUM, FREEZING IN AN AIR MEDIUM AT A TEMPERATURE OF 243K (-30C) AND A SUBSEQUENT FREEZE-DRYING, AS WELL AS DURING STORAGE. THE PURE CULTURES FROZEN IN A NITROGEN MEDIUM, AND THE ONES FROZEN AT 243 K AND FREEZE-DRIED, HAVE A 100% SURVIVABILITY ON STORAGE FOR 3 MONTHS. THE ACTIVITY OF THE CULTURES KEPT IN A NITROGEN MEDIUM IS PRESERVED BETTER THAN THE ONE OF THOSE FROZEN AT 243 K WITH A SUBSEQUENT FREEZE-DRYING AND STORAGE FOR DIFFERENT PERIODS.
