Summary

THE AUTHORS SOUGHT STABILITY AFTER FREEZE-DRYING IN DIFFERENT STRAINS OF LACTOBACILLUS BULGARICUS, ESPECIALLY AS REGARDS COLLECTION AND STORAGE CONDITIONS. SEVENTY-FOUR STRAINS WERE STUDIED. THE MAJORITY (54%) PROVED TO BE VIABLE AT THE RATE OF ONLY 1 TO 10%. BUT THE AUTHORS FOUND THAT PRESERVATION CAN BE IMPROVED BY ADDING CERTAIN PROTECTORS BEFORE FREEZE-DRYING. IN PARTICULAR, THE ADDITION OF PEO-400 AND PEO-1000, AS WELL AS 10% WATER-SUGAR SOLUTION, ARE EFFECTIVE IN THE COLLECTIVE VACUUM STORAGE OF CULTURES OF LACTOBACILLUS BULGARICUS. M. C.
