THE FILLETS WERE STORED 15 DAYS AT 274 K (1 DEG C) IN CONTROLLED ATMOSPHERE (THE CO2, O2, N2 AND AIR COMPOSITION OF THE ATMOSPHERE WAS CONSTANT DURING STORAGE) OR IN MODIFIED ATMOSPHERE (THE GAS MIXTURE WAS OBTAINED IN AN AIRTIGHT SYSTEM AT THE BEGINNING OF STORAGE). ANALYSIS OF THE MICROFLORA (AEROBICS, ANAEROBICS AND ALTEROMONAS PUTREFACIENS) AND MEASUREMENT OF TRIMETHYLAMINE INDEX. THE MODIFIED ATMOSPHERE PROVIDES BETTER STORAGE LIFE. (Bibliogr. int.
