Controlled atmosphere technology for reefer container transport and storage: an opportunity for Chinese exporters of fresh produce.

Summary
In order to maximize profits, fruits and vegetables must be harvested at the optimum maturity, chilled without delay to remove field heat and stored in refrigerated containers with active CA systems for transport. Scientific research and practical knowledge gained over the last 25 years shows that atmospheres rich in nitrogen with low oxygen and elevated carbon dioxide levels, in conjunction with proper temperature control, can be used to maintain the quality of fruits and vegetables, making ocean transport to distant markets possible. Containers with CA are also used for temporary storage in order to preserve product qualities; firmness, texture, taste and colour. While all CA systems used today will be reviewed, particular attention will be given to a nitrogen flushing system in which fresh streams of nitrogen are injected into reefers while in transit. This proven design is capable of actively controlling oxygen, nitrogen, and carbon dioxide levels from the field to the overseas distributor. Both the commercial and technical aspects of applying controlled atmosphere technology to People's Republic of China produce business are explored.
