Transport refrigeration: preservation of fruits and vegetables by controlled-atmosphere (CA) technology.

Summary

Fruits and vegetables are perishable products that respire after harvest by taking in oxygen and giving off carbon dioxide, moisture and heat. For many perishable products, the rate of respiration can be slowed by the application of CA technology that alters and maintains gas compositions at desired levels, improving product quality and extending product shelf life. In this paper, a modern CA technology integrated into a transport refrigeration system is discussed for its design principles, performance and application results.
