COMMENTS UPON THE ORIENTATION OF INVESTIGATIONS MADE IN DIFFERENT LABORATORIES IN ORDER TO IMPROVE KNOWLEDGE ABOUT BIOCHEMICAL, PHYSIOLOGICAL AND MICROBIAL DETERIORATION MECHANISMS IN CONVENIENCE FOODS (FRESH VEGETABLES OR FRUIT, WASHED, TRIMMED, CUT) AND HENCE ATTEMPT TO IMPROVE THE TECHNOLOGY OF PROCESSING AND PACKAGING OF THESE PRODUCTS WHOSE DEMAND IS INCREASING MARKEDLY. THE AUTHOR CONCLUDES THAT WHEN TECHNOLOGY IS FULLY DEVELOPED FOR PRESERVING SANITARY PREREQUISITES, THE FUTURE OF THIS MARKET WILL DEPEND UPON CONSUMER ACCEPTANCE OFA NECESSARILY HIGH COST. J.R.
