Summary
Studies were carried out to investigate storage losses and microbial contamination of fresh mushrooms in different container types, the effects of several factors on mushroom drying, and the economics of various mushroom preservation methods. Vacuum packaging and atmospheric pressure packaging are tested for weight losses. The best drying conditions are defined. Comparative costs of several preservation methods are presented.
