Summary

To address the question of the high sensitivity of lettuce to dehydration, observations in actual surroundings and laboratory simulation studies were performed, in order to measure changes in lettuce quality during distribution and to propose improvements. Marketing time was extended from 2 to 5 days for the whole sector, thanks to the combination of precooling, packaging in a plastic bag and display in refrigerated cabinets.
