Summary

Sliced cooked turkey bologna of varying additive formulations was surface-inoculated with Listeria monocytogenes (2.18-2.58 log CFU/g), vacuum packaged, and stored at 4 deg C. Growth of the pathogen was enumerated with five different agar media: tryptic soy agar, modified Oxford agar, mannitol-phenol red-esculin-ferric ammonium citrate agar, lithium chloride-phenylethanol-moxalactam (LPM) agar, and LPM-potassium tellurite agar.
