Summary

DETECTION OF FORMALDEHYDE (FA) ON 814 SAMPLES OF FROZEN FISH OF 30 DIFFERENT SPECIES IS REPORTED. FA HAS BEEN DETECTED ON 15 SPECIES IN LOW CONCENTRATIONS. ONLY 3 SPECIES (SHARK, CONGER, DORADE) PRESENT LEVELS SUPERIOR TO THE REGULATION. FA HAS NOT BEEN DETERMINATED ON 12 SPECIES DUE TO THE LACK OF SENSITIVITY OF THE METHOD USED WHICH IS EQUIVALENT TO 0.5 MG/KG. THE RESULTS PROVE THE IMPORTANCE OF THE DETERMINATION OF FA IN THE QUALITY CONTROL OF FROZEN FISH.
