Summary

The evolution of the French food industry is described along with the background of the economic, political, social, scientific and agricultural development of our century. The first half of the century is tied to the nineteenth century, even though the scientific improvements are preparing the future. The Second World War is the time of a burst, and the second half of the century brings a revolution. Food industry becomes the largest industry in France, and the biggest exporter worldwide, even though the increase in supermarkets brings new problems. Examples coming from the meat, milk, fruit and vegetable industries, from wine-making, and a few words about cereals, trade, hygiene, nutrition and environment illustrate the subject, as well as concern about the future.
