Summary

DIFFERENT COOLING PROCESSES WERE STUDIED ON THE GROWING SITE OF FRUIT AND VEGETABLE (PEACH, APRICOT, TOMATO, PLUM, APPLE). THE EFFECT OF RIPENESS AND OF FIELD STORAGE ON QUALITY, AFTER COOLING AND SHORT-TERM STORAGE, WAS STUDIED. THE USE OF THE PRECOOLING TECHNOLOGY REDUCES MASS LOSSES BY 2 TO 3 TIMES, WHILE MAINTAINING HIGH COMMERCIAL QUALITY AND THE STABILITY OF CHEMICAL COMPOSITION.
