DUTCH LEGISLATION DEFINES A NUMBER OF QUALITY CRITERIA. ONE REQUIREMENT IS THE TEMPERATURE AT WHICH PASTEURIZED MILK AND DAIRY PRODUCTS MUST BE DELIVERED TO THE CUSTOMER. ANTICIPATING MORE RIGOROUS FUTURE LEGISLATIVE REQUIREMENTS, AND GREATER CONSUMER CONCERN OVER FOOD QUALITY, THE AUTHOR EXAMINES CHILLING METHODS FOR THE DISTRIBUTION PASTEURIZED OF MILK AND DAIRY PRODUCTS. THE EFFICIENCY OF THE DIFFERENT SYSTEMS AND COSTS ARE COMPARED.
